Parfois, vous n’avez pas le contrôle de votre situation. Qui ne le sait pas ?
Les choses ne se passent tout simplement pas comme vous le souhaitez.
Et c’est comme ça avec le vin et son évolution.
En plus des évolutions que vous aimez voir dans votre vin, il y a des traits de caractère qui vous surprennent soudainement, comme au cours de l’éducation des enfants, et qui vous obligent à agir.
Ils deviennent alors rebelles.
Ceci ou quelque chose de similaire peut être utilisé pour décrire les levures dans le vin. Comme si elles devaient encore faire leur puberté après la fermentation. Et là, il faut faire attention, car sinon on aurait eu du vin ou encore plus “C’est du vinaigre avec le vin !”

En langage clair, cela signifie que – après avoir sulfuré le vin une fois – il faut s’attaquer à la perte de soufre. Et bien sûr : réajustement.
Un peu de perte est généralement normal pendant les premières semaines, mais cela devrait ensuite se stabiliser à des niveaux normaux.
Si ce n’est pas le cas et qu’il y a des signes d’une augmentation de la consommation de soufre, il faut être prudent et chercher à savoir pourquoi c’est le cas.
Malheureusement, cela peut avoir de nombreuses causes. Une des raisons peut être que le pH n’est pas correct. S’il est trop élevé, le soufre n’a aucun effet. Il faut d’abord y arriver…

Cependant, on s’aperçoit vite que le pH a une influence à de nombreux endroits. Et pas seulement avec le vin… Tous ceux qui ont été très attentifs en cours de chimie trouveront soudain les liens extrêmement logiques 😉 .
