15.03.2018 – Endlich stabil oder „vom Weg zum schwefelstabilen Wein”

Manchmal ist man ja nicht Herr seiner Lage. Wer kennt das nicht?

Da laufen die Dinge einfach nicht so wie man will. Und so ist das auch mit dem Wein und seinem Werdegang. Neben den Entwicklungen, die man gerne an seinem Wein sieht, gibt es plötzliche Charakterzüge, die einem wie im Laufe der Kindererziehung plötzlich überrascht und einem zum Handeln zwingt. Da werden sie aufmüpfig.

So oder so ähnlich kann man die Hefen in dem Wein bezeichnen. Als würden sie nach der Gärung noch in die Pubertät müssen. Und dann ist Vorsicht geboten, denn sonst hat man Wein gehabt oder noch eher “Ist’s Essig mit dem Wein!”

Das heißt im Klartext, man muss – nachdem man den Wein einmal geschwefelt hat – auf die Verluste des Schwefels ansprechen. Und natürlich: Nachregulieren.

Ein bisschen Verlust ist in der Regel normal während der ersten Wochen, das sollte sich dann aber auf ein Normalniveau einpendeln.

Tut es das nicht und zeichnet sich ein erhöhter Schwefelverbrauch ab, ist Vorsicht geboten und man muss herausfinden, warum das der Fall ist.

Das kann leider viele Ursachen haben. Ein Grund kann sein, dass der pH-Wert nicht stimmt. Ist der zu hoch, zeigt Schwefel keine Wirkung. Muss man erstmal drauf kommen…

Bald aber wird klar, dass der pH-Wert an vielen Stellen Einfluss nimmt. Nicht nur beim Wein…Wer im Chemieunterricht gut aufgepasst hat, findet die Zusammenhänge plötzlich äußerst logisch 😉 .
