Tout le monde pense que le vin de glace est génial.
Ce n’est pas le mien, je ne suis pas si mignon. Plutôt sec. Néanmoins, je devais faire quelque chose comme du vin de glace. Mais pas dans le sens traditionnel.
Pour moi, cette année, le vin de glace signifiait être capable d’éliminer naturellement l’acide du vin.
Si vous refroidissez le vin de façon extrême, la crème de tartre précipite et la concentration d’acide tartrique dans le vin est réduite.

Cependant, il faut plus que la température du réfrigérateur pour cela.
Puisqu’il ne m’est pas possible de refroidir le vin à ce point, nous utilisons la saison fraîche. La température annoncée de 10 degrés Celsius s’est avérée très pratique.
Donc, sans plus attendre, j’ai saisi les barriques et je les ai sorties avec la fourmi.
Elles sont restées là pendant 3 nuits dans une atmosphère inconfortablement froide.
