25.02.2018 – Eiswein – mal anders!
Alle Welt findet Eiswein etwas ganz Tolles.
Meins ist es nicht, ich stehe nicht so auf süß. Eher trocken. Nichts desto trotz musste ich sowas wie Eiswein machen. Jedoch nicht im traditionellen Sinne.
Für mich bedeutete Eiswein dieses Jahr, die Möglichkeit, dem Wein auf natürliche Weise Säure zu entziehen.
Wenn man den Wein extrem runterkühlt, fällt Weinstein aus und damit reduziert sich die Weinsäurekonzentration im Wein.
Allerdings benötigt man dafür doch mehr als nur Kühlschranktemperatur.
Da es mir nicht möglich ist, den Wein so stark runterzukühlen, nutzen wir die frische Jahreszeit. Da kamen mir die angekündigten – 10 Grad Celsius extrem gelegen.
Also kurzerhand die Barriquefässer geschnappt und mit der Ameise hinausgebracht. Dort verharrten sie in ungemütlich kalter Atmosphäre 3 Nächte.
Das Ergebnis…? – Können wir dann in etwa zwei Jahren probieren.
